Using only the freshest ingredients from around the world, Bellini’s combines health-conscious Californian cuisine with the indulgent tendencies of Italian cooking, and then adds the best elements from a host of other culinary traditions. The result is an ever-evolving yet exquisitely international menu. A perennial favourite is the Australian rack of lamb, served with Swiss chard, caramelized shallots, roasted potatoes, Portobello mushrooms and balsamic jus. The grilled tiger shrimp and scallops are served with Mediterranean couscous, ratatouille and Pernod beurre blanc. The herb-crusted Atlantic salmon features a soya-marin glaze. This fusion of influences and an excellent wine list (featuring selections from Italy, California, New Zealand and Australia) make for a truly spectacular dining experience.
